9 to 15 ~ SS 301 ACHS Summer Session in Greece 2010
17 to 22 ~ Chios, Greece Summer Session 2010
26 to July 2 ~ Nat 309 Holistic Nutrition II in Greece based on the Mediterranean Diet ~ Susan will be teaching daily hands-on classes in the kitchen of the Villa Abela, using local ingredients from the market and gathering herbs from neighboring gardens and the hillsides. She will be using the Mediterranean Food Pyramid as a guide for following a healthy diet featuring whole grains (including bread, pasta, rice, couscous, etc.); seasonal fruits and vegetables; beans, legumes and nuts; olive oil; cheese and yogurt. She will also present a few classes on spa herbs and using herbs and essential oils in and around the home from her book the creative herbal home. This class is informal and fun, held in a lovely villa on the island of Syros overlooking the Aegean Sea—what could be better than cooking good food using fresh, local ingredients and then walking down to the beach for a swim in azure waters before dining al fresco?
