calendula cornmeal crisps

the cornmeal gives these cookies crunch and color. They are full of nuts and dried fruit; you could vary the nuts—try almonds or pistachios, dried cherries are also delicious or experiment with chopped dried apricots.

eggplant & tomato salad

this salad is simple and tasty. I like to use the long skinny eggplants so that I have little rounds, or I cut them in half for half-moon shapes. If you use a large eggplant, slice it into 1/4-inch thick slices and then into large bite-sized pieces.       view recipe >>
